At work we have to fill out Adobe acrobat documents that have multiple check boxes and text boxes. Most of the time we will be checking and typing the same thing on each separate document. Sometimes we get upwards of 20 docuwhere we are checking and typing the same thing. Is there a way I can prefill some of the check boxes and text boxes?

If the fields are named the same in all of these files, the yes. Simply export the form data from a filled-in file to an FDF file, and then import that file into the empty PDFs you want to work on.
Both commands are located under More in Prepare Form mode.

Not sure if this will work for you. But you can add a default value for a text field, meaning what you type there will start in the field, but can be overriden by a user. You can also set the property so a check box is checked by default, though it can be changed. Both of those can be set in the Options tab of the field properties.
