Thank you for reaching out. There is no option in the preferences to disable these features.

We can disable online services for the product, and that will help disable e-sign for volume deployment: https://adobe.ly/4kgIzYm

If you have a Teams or Enterprise subscription, your IT admin can help disable e-signature for required users. Let us know if you have further questions.
