Issues with copy/paste Adobe Acrobat Pro DC

When I print to a pdf and go back to copy text from the document, I am unable to select the text that I am seeking to copy. It arranges the text in ways that I am unable to manage and cannot figure out how to fix as the text goes to multiple layers and very hard to manipulate.

Help and suggestions would be appreciated.
