How ridiculous is it that Adobe still cannot allow us to do this... 5 years later! Why do we always have to 'hack the system' for a simple editing option.

If this possibility existed it would be a property of the PDF format (aka ISO 32000-1), not a feature of Acrobat (or any other software).
It is what allows PDF forms to look the same everywhere.

 

If I'm not mistaken, this property exists in the PDF 2.0 format (aka ISO 32000-2), wait and see…

I couldn't agree more.
The fact that Adobe hasn't incorporated the text alignment feature in a List Box is unfathomable.
Very Henry Ford: You can have any text alignment you like, as long as it's left aligned. 🙂

Actually you can left or right align text in a dropdown, but it cannot be centered.
