I am creating a document which is more or less a process with certain steps.
What I want is that after each step inspector will sign the document. So one person will be signing multiple times the same document. This is not an issue so far.
In addition to this, I want that once inspector sign the document, this signature becomes read only or unchangable. I could not figure out the way to do this. Is there any option for one time signatre only after it is signed while other fields will still be active ?

Hello, sorry but I dont understand how that post or answer relates to my question. Let me clarify a bit more.
I am using Adobe acrobat for creating a form pdf with e-signature fields. I want to create an standalone pdf that will be used by assembler and inspector and these people will be different everytime and I dont have any information related to them. Flow is like this, pdf will be in database, from there assembler will access it and make a copy of it, this will be signed several times by several people, this has to be irreversible process, once done it will be back in database. There wont be anyone to monitor, verify or assign people for the document.

You can use the settings of each signature field to configure it to be locked after signing. But beware, Adobe has decided (or has been pushed) to always allow the original signer of a signature to remove that signature. And also beware, there is software around that ignores such locks and removes signatures nonetheless.
For these and for other reasons you should not overwrite the previous state of that PDF but instead keep all revisions of it as history.
