Please reinstall latest scanner driver once. You can try the option available here: Troubleshooting tips for scanner issues when using Acrobat

Also please share following details if options above didn't work:

- Acrobat version

- OS detail

- Scanner detail

- Are you facing same issue for all scans?

Scans are images and usually the entire page. That is a big or large image. Acrobat/Reader by default does not display larger images because o the performance hit to display them. You need to check the "Preferences" and make sure that you are allowing large images to be shown.

Note some updates reset your preferences.
