Hi Stephen,
Thank you for reaching out.
As you have mentioned, you are opening the PDF by double-clicking them. Could you please confirm if no files are open in the application?
Try opening PDF directly from Acrobat. In Acrobat, go to File > Open. Check if that works.
Please ensure that the application is updated to the latest version. You may check the application version using the steps suggested in the following help document: https://helpx.adobe.com/uk/acrobat/kb/identify-product-version.html.
To check the latest version available for the application, please check the following page: https://helpx.adobe.com/acrobat/release-note/release-notes-acrobat-reader.html.
You may update the application from the Help menu > Check for updates in the application.
If the issue persists, try once to remove the application and run the cleaner tool (https://www.adobe.com/devnet-docs/acrobatetk/tools/Labs/cleaner.html). Reboot the machine and install the application from the following page: https://helpx.adobe.com/download-install/kb/download-install-acrobat-subscription.html.
Let us know how it goes.
Thanks,
Meenakshi
