I keep getting notifications that the Adobe Acrobat Reader update failed, but I don't event have it on my computer. I only have Adobe Acrobat Pro which is up to date.
Any suggestions for cleaning this up?

This also happens to me all the time now.
I ignore it but I can't help but wonder what is going on there. We can't be the only two people who have this happen on a regular basis.
I also have Pro, along with a full subscription of Adobe Creative Cloud. I'm not using any free versions, and everything is updated through the Adobe Creative Cloud manager (as far as I know).

If you are still looking for a solution, please run the Acrobat cleaner tool https://adobe.ly/4j0A2sR, reboot the computer once, and install the application using the direct link https://adobe.ly/4j0A3wV and see if that works for you.

I finally resolved the problem by using the free tool Search Everything. I uninstalled Adobe Acrobat Reader where ever I could find it. Haven't had any notices about updating it since.
But, I do have another problem which is Adobe Collaboration Synchronizer 24.5 stopped working. I have not yet figured out how to resolve this problem. Adobe Acrobat Pro is up to date and seems to be working properly for the functions I use. I can see this issue in Windows 10 Pro View Reliability History.
