Error message: "Unable to convert Postscript file" when printing a particular PDF to a HP printer. Workaround: Print the exact same PDF from my iPhone. So this is obviously an Adobe quirk. Someone please advise.

Hope you are doing well and sorry to hear about your experience.
Please check for any missing/pending updates for printer driver and firmware and try updating it and check.
If it doesn't work, you may try to remove the printer driver from your system and reinstall it from the manufacturer web site.
Also please try to print the PDF as Image go to Print > Advanced > Print As Image as described in the similar discussion https://community.adobe.com/t5/acrobat/unable-to-convert-postscript-file/m-p/4689513/thread-id/14247...
