Photo desaturation from Illustrator to Acrobat

I'm currently custom making a photography portfolio in Illustrator because of course some college apps don't take a website link for portfolio submission....

Anyway, when saving an artboard as an Adobe PDF, I go in and view it afterwards and the colors are signinficatly altered from the version in Illustrator. How do I stop this from happening?

I've done some searching and I imagine this has to do something with color managment not happening in Acrobat. Not sure how to fix that though.
