I have Adobe Acrobat Pro. I do not have Acrobat Reader. With the portfolio document (which contains a form with text field for user data entry) that I have created, is it possible to view it from Acrobat Pro as one would see it in Reader?

If you have the 64 bits Acrobat, I think that this one changes to Acrobat Reader when you are signed out. If you have the 32 bits Acrobat, you need to install the Reader to get Reader functionality.

Thanks for your reply. When I view the portfolio (example attached) in Pro, it shows the individual pdfs on the left. These can be removed. I don't want the user to be able to modify or delete these in any way. Will a user in Reader be able to do that?

Users with Acrobat DC or Acrobat DC Pro can modify the data, except you put a protection on the PDF files.

No, Acrobat Reader cannot add or delete files in a PDF Portfolio.
