Hello, 

We are a group of people who "redact" files in PDF in relation to e.g. GDPR. I wonder if it is possible to, for example, mark that the specific name "Fred Hansen" should be edited out of the entire PDF file? Instead of removing one by one with the same name on several hundred pages?

Of course. Use the Search & Remove Text tool, under the Protection section of the Tools panel.
