I created and distributed a form in Adobe Pro. I had the responses go to another staff member and myself. Now all my forms are going to both the other staff member and myself. How do I remove the staff member form the form? They have left our company.

Hope you are doing well and sorry to hear that.
If an incorrect e-mail address was used originally, or if you want to change the individual signing, you can replace the participant with the new one as described here https://helpx.adobe.com/sign/using/manage-documents-sent-for-signature.html and see if that works for you.
