8x8 is square, 8.5x11 isn't. So that's a major problem.
If you have access to Indesign, you could try to fix the PDF there, but basically, and assuming, that it has been designed for 8.5x11, I really would redo the book. Sorry for that.
If you have, however, designed a 8x8 book, and there is just a lot of space around, you can crop to size.

That is potentially a big challenge. Do you want to
- Add white space to make a big square (11 x 11) then scale down to 8 x 8?
- Chop off text and everything from the page (0.5 inches from the width, 3 inches from the height)
- Scale "non proportionally" so the text becomes super narrow, scaling height a little and width a lot?
- Lay the book out again, making more pages and flowing to fit?
- Something else?
