How do I save a pdf so that only I can edit it?

The best way is to digitally sign them. While not preventing others from editing them entirely, it will allow you to prove that the file has been edited, as it would invalidate the signature.

Another good step you can take is to apply a security policy that prevents editing, AND one that requires entering a password to open the file. Of course, use different passwords for both things, and only share the file-open one with anyone else you give the file to.
