I am having trouble creating forms, specifically calculated forms. It looks like as I look through some of the tutorials, I'm just plain missing options. Ie. to format the text field as a number, There is no format tab, so I cannot make a field number only, nor are there options for calculation field. I'm using Adobe Acrobat Pro DC and it's up to date acording to the update checker. (2021.005.20060)

Hope you are doing well and sorry for the trouble. As described you are not getting the option for format or calculate tab in the PDF form.
Please try the steps below:
Open the PDF form > Go to Tools > Prepare form > In the Right hand pane, click on More > Revert to Acrobat Form.

It is likely, we do use a lot of Adobe Sign... Will these forms be compatable with Sign? These are for contracts that we want to give clients to be able to select add-ons if they want to all on one form.

Adobe Sign text tags can be used in conjunction with Acrobat form fields to define the specific properties of a field. While text tags are added directly to a document in line with the content, PDF tags are used to name the fields, defining the rules and validations of the physically placed field. Acrobat form fields combine the ease of use of the drag-and-drop authoring environment with the versatility of the text tags.
When a document is uploaded to the Adobe Sign Document Library or send out for signature, the Acrobat form fields are processed by the system and converted into Adobe Sign form fields. The system specifically looks at the name the field is given, verifies that an Adobe Sign tag has been defined. It then creates an Adobe Sign form field with the properties you have defined.
Tags allow for specific properties to be set for the fields. Using this with Acrobat’s form field placement tools, your document can be fully functional and professional in appearance.

In the future do not tick the box that says "This document requires signatures" when creating the form.
This converts the form to an Adobe Sign form, which is much more limited. It's a shame the text is so vague. A lot of people have this issue as a result...
