When I export form data to excel, I'm also getting all my hidden fields many of which do not need to be in that spreadsheet and just create clutter. Is there any way to set a form field property to "do not export"?

You can use a script to export the data, and then you would be able to select which fields to export.

So I could create an Export Data button and then I assume the script could identify the fields not to export and export everything else? So I could name all those fields FieldName.DNE and then not export anything with that suffix.

Yes, that's possible to achieve.

Actually it would be easier to script if all of the export fields where named Export.FieldName.

Are there more fields to be exported, or not exported?

But I see what you are saying, I could probably add DNE to the beginning of the field name.

If all of the fields that are to be exported are prefixed with "Export." for example, then all of the fields are grouped and JavaScript functions that act on a field name will act on the group. So for the export function

this.exportAsText({aFields:["Export"]});

will export a Tab Delimited file of every field prefixed with "Export."
