I'm using Adobe Acrobat Pro. In the past, I've been able to save a color PDF as a black and white PDF by using the Print button - Microsoft Print to PDF and then check Print in grayscale (black and white) box. That does not work anymore. It will save in color. I've tried Advanced settings, checking my printer settings, nothing works. I uninstalled and installed Adobe and even contacted Adobe. They forwarded my case to an "Expert." I thought I'd give this forum a try. Any suggestions?

Check your converted pdf with the output preview tool (separations) to confirm black is the only separation.

I was able to get help from Adobe. Evidently, this is a known problem with the 64-bit version. After installing the older 32-bit version, it works like a charm. Hopefully they can figure out a fix for the 64-bit version.
