I'm from Central Europe and when put some special character using "fill and sign" function adobe switches to different font but just for text lines which include special character. The problem was discussed by TNo user here: changing-the-font-in-the-fill-and-sign-function and but hasn't been rectified.
I have done all steps which usually are suggested by support. I have newly installed Adobe Reader with all updates (Adobe Reader 2022.003.20263 | 64-bit Windows 11) and I checked a lot of PDF files created by me and downloaded from the Internet.
Because more than a year has passed since the previous thread I've mentioned above, I have some clue for you Adobe. As long as I use characters included in ANSI coding space "fill and sing" function uses Arial font with ANSI coding, but one special character is enough to cause Adobe to switch to MinionPro Regular font with Identity-H coding. Arial font supports Central Europe characters by itself, so the problem is selected coding. If it's impossible to use Arial, it's better to switch to MinionPro for all texts added with "fill and sign" when special characters are used. It looks very sloppy when there are different fonts in document.

Adobe, please follow this advice! It is heart breaking that this still does not work... 😞

Still not fixed, have trouble with this for many years now, despite being paying customer. Pity and shame on Adobe as it must be a quick fix to do.
