Is there any way to view all content in sticky note without having to expand note? Currently, i can type some notes in my PDF sticky note and once i save it and reopen, it only shows the top 2 lines. therefore, i either have to click inside the sticky note or i have to manually make the box larger so show all notes. Please help.

When youy open the comments pane, Acrobat should show all the text of a comment.
In Acrobat's preferences, when you select the "Commenting" category, you can select to automatically pop up the comments on mouse-over.
At the top of the comments pane, you can find the three dots that indicate a menu. When you open this menu, the item "Create comment summary" will show all comments in the document with the full text.

Thank you for your feedback. as ridiculous as it sounds the one extra click makes a difference as we are opening multiple invoices at a time so we would have to either click inside the sticky note to view everything or click on the commend pane to view all comments and this ends up being tedious. as you can see from the attached, when i open the sticky note it only shows me the first two lines (att 1) but the note has more than 2 lines (att 2). i also have my preferences set to automatically open (att 3). let me know if there are any other suggestions where i can open my invoice and all lines of my sticky note will appear without having to click anything else.

Which version of Acrobat are you using? I am on the latest, and I do have another option in preferences:
This setting will open the comments pane without any additional clicks when you open a PDF file with comments.

Go to Acrobat's Help menu and select to check for updates. I just verified again that I am on the lastest version of Acrobat, and I have the option to open the comments pane automatically.
