Hello,
I am working as a help desk and couple of our staff having an issue with Adobe PDF it keeps uninstalling. For most of the staff, it's fixed by turning off auto update but one of our staff still has the same issue every 2 to 6 weeks it keeps on uninstalling. can someone please help with this issue?

Hi,
When you say uninstalling, are you referring to Microsoft Windows changing the default printing device to another printer, or are you explicitely stating that all of the driver files or printing software actually uninstalls itself (to include the firmware drivers) ??
If you didn't have Adobe Acrobat at all, would you be able to test if the same problem occurs with the "Microsoft Print to PDF" driver or another printing device?

NOTE:
There is a feature in Microsoft Windows 10 and Windows 11 that may need to be disabled.
It consistently switches back to the most recently used printer and makes it the default printing device until another printer is selected by the user at printing time.

If the users who are experiencing this issue have "Let Windows manage my default printer" checked (Control Panel => Printers & Scanners), untick that checkbox to disable that feature.
