I have a half-finished beautiful PDF, but now everytime I type it won't let me put spaces between words. For example, I want to type "By So and So" it will start out "By " but when I go to add my S it deletes the space and makes it "ByS" instead of "By S".
If I try to add text in the middle of an existing sentence, it will even cause the next word to move backward. The more times I hit the space bar, the farther back my text will move. The text that I want to move forward will start to overlap the words before it. If I keep pressing space the following words will move backward beyond the limit of the text box and into the left margin of the page. I wish I could describe this better.
Edit: this problem might be specific to some text boxes, but not all. Why?
Why does technology hate me?

Acrobat is not a good editor and isn’t made for creating whole docs. Use Word or your favourite tool, save to PDF. Never edit the PDF, edit original every time.

Did you by any chance hit your "Insert" key on the keypad of your keyboard? Try toggling the Insert key on and off to see if that is the problem.

I had this same issue and I found a workaround by highlighting the text where I wanted a space and adjusting the character spacing using the option on the right side of the screen. It's not efficient, but it works in a pinch.
