When I open a document, it always opens size 182%. I have tried preferences, etc, to set the default size as 100%, but it does not work. I have a Mac and use Adobe Acrobat Reader DC Version 2015. How do I set the default zoom size?

Did you try setting it under Edit - Preferences - Page Display - Zoom?
Another option is to tick the box that says "Restore last view settings when reopening documents", under Edit - Prefs. - Documents.

Yes, I have tried Page display, Documents, and Accessibility, marking 100%
as the default, but new documents still open in very high zoom.

Can you share the file in question? It's possible there's something in it that's causing this.

It doesn't matter which file it is. Every new file opens at Zoom 182%.
After I've changed it to 100%, it's ok because I've ticked the 'Restore
last view settings' box.
