Has anyone run into problems highlighting text and the Adobe reader shutting down immediately?
Ive run updates with no change in status.

As mentioned, that you have already installed the update and that didn't make the difference.
Have you also tried repairing the installation? If not, then you must try repairing the installation of the Acrobat Reader.
Launch Reader>Help>Repair Installation.
If that doesn't help, then you must try resetting the preferences of the Acrobat following the steps mentioned below-
