I am having issues with the Adobe Scan app. This app used to be so reliable and fast and saved so much time in work. Now, it can take 5 minutes upwards to send even a small sized PDF.
I have ensured all updates are installed on both app, phone and PC. I cannot understand why it is now doing this - can anybody help?

Sorry to hear about the trouble caused.
Have you checked if you have enough storage left in the storage quota? This could be a possible reason for uploads getting stuck.
You can check the storage quota from here: https://assets.adobe.com/files/
Since you already have installed the updates. Then, as a workaround, please remove the Adobe Scan app and re-launch it whenever you face the issue with slow uploading. This should fix the issue temporarily, and you should be able to upload/share files again.
Note: removing the application, make sure you have a backup for all the files.
