All my pdf files are now converted to .doc / Microsoft (not my doing or choice) and I have to manually open and use adobe to read instead of double clicking. How do I solve this problem and convert all the files back to pdf as they were originally?

That depends. You have to reset your OS's file associations but we don't know what OS you use.

I did however solved the problem since I posted the question.
Right click on file; go to properties; change icon to pdf. All the files' icons converted back to pdf.
