Reader itself cannot do that. You can purchase an add-on subscription that will allow it.

You need to subscribe Adobe Acrobat. Once you have installed the Adobe Acrobat, go to Tools> Export PDF, Adobe will process OCR automatically on the scanned document, then choose output as Word. Done!
