Scanning and sending a PDF Form

When I scan a document in PDF form the recipient can also open up all my other PDF documents under Adobe Reader. How to I send one thing only secured.

Are you assuming this because YOU CAN when you open it? You wouldn't be the first to assume this, but this is just because it's you on your computer. These are your apps, your menus, your tools, with access to stuff on your computer.  Other people will see something different, though sometimes people find this hard to believe - no idea why.
