Recently, I have noticed when using the highlight tool of the latest version of the Adobe Acrobat Reader DC, there are gaps of the highlight color missing/highlighted throughout the text selected. It's an issue with even trying to highlight just one word without showing breaks/lines between the letters. I never had this issue from any previous documents from the same source and of the same format. I have already researched help topics of unsupported documents, but I never had any prior issues with these previous lecture slides. I have uninstalled and reinstalled the software, played around with the commenting preferences menu, turned off touch mode. How can I resolve this issue?

Could you please try following steps and see if that resolves the issue:
1- Disable Protected Mode, launch Reader>select Edit menu>Preferences>under Categories, click Security (Enhanced)>uncheck the box next to Enable Protected Mode at startup and then click OK.
Please note: Disabling Protected Mode is for troubleshooting purpose only and not recommended, Please turn the feature back on after finishing the troubleshooting.
2 - If that doesn't work, restore the preferences,
Close Acrobat Reader.
(ii) Go to C:\Users\your username\AppData\Roaming\Adobe\Acrobat\DC,
(iii) Move the entire DC folder to some other location like temp folder.
To view temp folder , press and hold Windows key and press R on your keyboard ,type temp in the run dialogue box then press enter.
If App data folder is not visible under your user name , type %appdata% in run dialogue box and hit enter
(iv) Restart Adobe Reader.
