As per my understanding, your Acrobat Reader mobile application is crashing when editing a pdf.
For the resolution, could you please try these steps: -
1. Try to clear the cache of the application.
2. Update the application and your device.
3. Sign out and sign in back.
Could you please help me with some details too so I can understand the issue better: -

2. Are you experiencing this issue with a specific file? If yes, would you mind sharing a sample file to try and reproduce it on my end?
3. A video of the workflow you're performing while opening the document.
