How do I disable cloud storage? I'm only going to assume that updates were made and now all my files are being saved on the cloud, I need to disable it asap. Help please

Hope you are doing well. Per the description, you want to disable cloud storage.
By design, Acrobat Reader Mobile does not save files to the cloud unless done manually.
So, if you have the cloud account logged in, the files will not be affected or uploaded automatically unless you use the option to upload to Acrobat Cloud Storage.

There are no direct steps to disable Acrobat Cloud Storage.
Since Adobe Storage does not work like other cloud drives, you are free to use it without worries about files getting synced automatically.

@KXM Acrobat Cloud storage can be disabled from the backend if you are on an enterprise account.
Note: Adobe Cloud Storage does not automatically back up files unless done so manually.
