Hi Lyannec,
Yes, you can disable the Save signature feature in the Adobe Acrobat Reader on iPhone.
In the window where you create signature, please disable the radio button for Save online/Signature while creating the signature.
The next time you will sign the document, the signature would not be there.
Hope that helps.
Let us know if you are referring to something else.

Is it possible to permanently disable this feature for the iPhone/iPad app?

It is now a check button that is always checked by default. Even when turned off. There should be an option to either turn off the default in preferences. Or the default should be unchecked. This makes people uncomfortable about signing a form.

Thanks for reporting in!
The option is checked by default to save you time in creating the signature every time you need to sign a document.
If you do not wish to save the signature, you can always uncheck the feature to stop Acrobat from saving the signature to your cloud account.
Hope this clarifies your point.
