Yes, it is possible to select a single word from the text in the PDF.
If you long press on a particular word, only that word gets selected.
If you are not able to select the word in that way, you may drag the selection to the single word or character from the selected text.

I have tried to replicate the same on our end. It selects one word at a time.
Please try to check on other files or applications.

Other apps work well.
Actually, I tried with the Getting Started pdf, it works well,
But for other pdf (mine are academic papers), it doesn't.
Is it possible to share any PDF on which you experience this behavior?
