installed adobe Acrobat Reader DC - converted my files to .pdf extensions.

Installed Adobe Acrobat Reader DC.  It converted my files to .pdf.  How do I undo this and get them back to .doc

That doesn't make sense. PDF and DOC files are totally different things. What happens when you try to open such files? Can Adobe Reader display the files or does an error message occure?

Reader can't convert Word docs to PDF, and won't do it automatically, even if it could.

What happened, most likely, is that the file extension for the .doc files got associated with Reader. It can be easily changed back, but what's your OS?
