We are sorry for the trouble. As described, The reader will not save any settings. Also it logs you out all the time.
Please try to logout of the application and reboot the computer once and relogin and check.
If it still doesn't work, please try to reset the preferences to default as described in the help page https://community.adobe.com/t5/acrobat/how-to-reset-acrobat-preference-settings-to-default/td-p/4792...
If it still doesn't work, please try to repair the installation (Windows Only) from the help menu and check.
If you are connected to company network, please look at the similar discussion https://community.adobe.com/t5/download-install/adobe-keeps-on-logging-me-out/td-p/9170057?page=1 and see if that helps.

I've done all of that. It won't even close all tabs when I try to close the app. Never had any issues with it until a week or 2 ago.

Hi there,
We are sorry to hear that. Please try to create a new test user profile with full admin rights or enable the root account in Mac and try using the application there and check.
If it still doesn't work, please remove the application using the Acrobat Cleaner Tool https://labs.adobe.com/downloads/acrobatcleaner.html , reboot the computer once and reinstall the application using the link https://get.adobe.com/reader/enterprise/
