I have a need to develop plugins for Acrobat Pro 2020 

The only SDK I could find was for Acrobat DC

 

Where do I find the sdk and related documentation for Acrobat Pro 2020?

Acrobat 2020 is the "classic" track and Acrobat DC is the "continous" track. But DC is also sometimes the generic term for both tracks.
