Acrobat XI Pro we are trying to output files to CMYK Photoshop5 in convert colours and we had used the Photoshop 5 format previously but it isn't available now?

Unless you have an ICC color profile for CMYK Photoshop 5, there is no way to do such conversion in Acrobat.
