Having issues taking a Photoshop file with some text 100% and creating a PDF that doesnt take the text and make it built.....

Please provide the exact dot version of the software & OS installed at your system .Also check whether is there any update available for the software after going through "help > check for updates "
Would like to tell you that in this case text you placed over the layer in Photoshop might be consider as an image in Acrobat,this could be one of the reason for getting such behavior .
How you are creating the Photoshop Documents as PDF .

Actually sorry I wasnt quite clear. I as I have always done before sending to our printer.... drop the tiffs from photosho CC 2015 into the also newer version of Adobe Acrobat and that is when the change happens. Never had an issue till Friday when I updated everything through the Creative Cloud. I am running OS 10.9.5 by the way

Taking my Photoshop Tiffs and dropping them into Adobe Acrobat and then it converting the 100% black text I have to built text.

What is "built"? Please give FULL details of what you mean, and how you find out.

I figured it out... the 100% black text was turning into CMYK when I was making PDF's. The issue was in the Adobe preferences under the Convert To PDF tab....
