I have several digital signature fields in my Adobe Acrobat form. The form is used as an intake form and is signed by several indviduals on an ipad. When the signature fields are filled out we get several errors and warnings about their authenticity / cryptographic credibility yatta yatta. These security features are over kill for the client. Basicaly how can we disable them and/or have acrobat treat them more like "drawing fields"?

Yoi can't treat a digital signature field as a drawing field, and for a good reason
The closest thing you can get similar to drawing tools is comment boxes which allows the user to pick different shapes and color. If you have noticed, even when you are in edit mode, the Adobe Acrobat Pro will allow the user to insert images but not edit them within the application as you would with any other image manipulation program. It will allow you to insert an image placeholder in your PDF document but the actual editing is done with an external program (which you can select as default in Acrobat preferences).
The errors that you are observing, on the other hand, are normal and are slo part of a security verification process that validated the authenticity of digital signatures applied to a PDF document.
If dont wish to see these messages every time just disable the verification of signatures in your Acrobat preferences.
