Is it possible to edit the submit button on an existing PDF fillable form? I need to redirect the URL these will be submitted to and I don't want to have to re-do all of the form fields.

That depends on how it was set up. If you used the "Distribute Form" feature of Acrobat to set it up, you'll have to do it again with a previous copy of the form as it was before you distributed it. You'll also have to change the email address in your preferences since that what it uses.
If you set up your own submit button and did not use the distribute form feature, then you can edit the properties of the button and configure a new submit form action using the different email address.

I do not believe I used the "distribute form" feature, but honestly I'm not really familiar with PDF forms and was following an instruction sheet. Now I need to change the URL that the submit button links to and I'd rather not re-do ALL of the forms. (over 100)
How would I edit the properties of the submit button? Can I delete it and create a new one? Edit the existing?

If the forms have not been secured against changes and are not Reader-enabled, you can begin by going into form editing mode by selecting: Tools > Forms > Edit
You can then locate the submit button and double-click it to bring up the Properties dialog. On the Actions tab it should have a Mouse Up action, probably a "Submit a form" type, that you can edit and specify a new URL, which if emailing will be a mailto type URL. Just change it to reflect the new email address. It could be that the button is set up differently (e.g., with a JavaScript action that uses submitForm or mailDoc), so post again if these instructions don't work with your forms.

OK. When I try to edit, it tells me to save as a copy. (see attached)
I save a copy and then it tells me "you cannot edit this file as a form".
