How do I remove highlighting from text in Acrobat Pro?

Depends how it was added. If it's a comment then you should be able to simply click it and press Delete to remove it.
If it's a part of the document's static contents it's more difficult. You can try to do it using the Edit Text & Images tool, but there's no guarantee it will work.

I tried using the Edit Text and Images tool. If there’s a way to do it, I could not figure it out.

That's entirely possible, depending on how the file was created. Another option is that it's a part of an image. In that case you can use that same tool to right-click it and then select to edit it using an external graphics editor (like Photoshop) where you might be able to do it.

I figured there was some easy way to do this, but I haven’t been able to figure it out. I highlighted the text to show my edits to another party. I need to remove the highlighting now that they have agreed to the edits. Is there a way to change the color of the highlight tool? If so, I might be able to change it to clear or white as in Word.

You added the highlights? Then it should be pretty easy to remove them. Did you use the highlight commenting tool? If so, just click on the highlights and press Delete. Or you can do it from the Comments List in the Comments panel.
