How to edit info that was already entered & saved into a pdf form?

Need to change just a couple lines of info entered onto a LARGE form, and don't want to enter ALL the info again.  Any shortcuts?

When the form is not locked, signed you can change the entered data.

I have got a related question:

Can a form have the fields locked (not changeable) -before- the form is signed?

the project uses a fillable form that creates a copy (with duplicate filled fields) to be signed by a customer, but -obviously?-  when the form is signed by customer he should not have the chance to alter data on those fields.

Is it possible?
