How to turn grayscale pdf into white pdf

I have an invoice which originally was color, I used Preflight to turn it into Grayscale, however, the gray was still too dark. Now, I need to turn it into white background. I also found out under "output preview", if I select "Text" in the show field, that works for me, but I don't know how to save it? Can anyone help me please? Thanks,

I would use the Content navigation pane (View>Show/Hide>Navigation Panes>Content) to remove the background. you will have to click around in the contents pane a bit to identify which objects comprise the background, but once  you know where that information is on the first page, you will have a much easier time to find this on the other pages of the document.
