I am looking to buy Adobe PDF Pack. Just want to make sure if with this package I can extract pages from another PDF file, use it to create new PDF files. Is this Pack similar to Adobe Professional?

No, it can't do that. The PDF Pack can convert files to PDF, combine PDF files and allow you to send and track files. That's it, pretty much. To be able to extract individual pages from an existing PDF you'll need Acrobat (either Standard or Pro).
