I am running Acrobat DC Pro under MacOsSierra and when I want to scan a dokument I can´t choose the option Ask for scanning additional pages. Why?

If I am not wrong you are using ICA scanner. This option 'Prompt for more pages' is not available for ICA scanners as of now. But we are working on it and same will be available soon. I will update you once its available.

For now please try TWAIN driver.

Please install the latest version of Acrobat. This problem has been resolved in latest Acrobat patch released on 11/10.
