In table of contents for 1,000 page document how can I include viewable page number which matches page number of link? AND viewable page # automatically update if pages are added or deleted.

This is something that needs to be set up before the file is converted to PDF. It's not the kind of task that can be done after the file has been converted to PDF (at least, not unless you edit each item in the TOC manually).

unfortunately I can't go backwards and restart this multivolume project. all I'm trying to do is make the "linked page number" viewable - surely adobe included that function somewhere?
LATER I would be interested to know how to add this function if restarting - but that's not an option on this project with deadlines.
Obviously I can manually add page numbers for each link - but if the document changes all the page numbers would have to be edited manually again. and I'm sure in this O&M Manual there will be changes.

When you say TOC do you mean the bookmarks in the file, or is this actual static content? If the latter, then no, there's no way to do this process automatically. And even with bookmarks it would require using a script.
