We are planning to use digital signature from Acrobat DC to sign validation documents in according with FDA requirements.
We already have a MS Azure'machine' validated and we thought on installing Acrobat DC desktop in this machine and access it remotely.
Is that possible? Any concern about it?

‌Very serious concerns. Acrobat is technically unsuitable but even more important it has an individual user licence forbidding server use. In general with server platform software choices your first question needs to be the licensing model, I have seen this mistake lead to bills based on the number of web users or worse.
