how can I avoid to manually change the settings (document properties) per each new document?

(in my case: File-Properties-View when open

If you need this behavior just for you and your computer go to : Preferences : Display : Zoom

If you need this behavior for a bunch of PDFs that you are going to distribute you can batch edit them using an Action in the Acrobat's Action wizard (requires Acrobat Pro).
