  • open the form in Adobe Acrobat
  • fill the form fields
  • save the form
  • re-open the form in Adobe Acrobat
  • you will see the filled form fields

In that case it's possible there's a script embedded in the file that does that.

To test it out disable JS (via Edit - Preferences - JavaScript) and then fill in the file, save it, close it and re-open it.
