Can you create a dynamic list box in Acrobat Pro? I am trying to create an interactive form for my customers to update their account information. I want to make it so only the data fields open up for the categories they select (name, billing address, etc)

Yes, you can dynamically change the items in a list with JavaScript, and you can change other fields with a list selection.
